Baked Vegetable Jalfrazie

My posts do seem to be running to food a lot these days . But the idea of this blog is not to talk about what I did yesterday or the days before when I was doing many other things.  It’s about today and finding happiness today in doing something new, something different; in taking a small risk and stepping out of the image of myself that I have been building up.

So here is a low calorie, healthy recipe that I found good

Ingredients:

2 teacups chopped mixed boiled vegetables (beans, carrots, caulifower, green peas)                                     

2 chopped onions

4 tbs chopped capsicum

2 chopped tomateos

1/2-1 tsp chilli powder

a pinch garam masala or any other spicy masala

2 tbsp chopped coriander

6 tbsp grated paneer (or cheese if you prefer)

1 +1/2 cups tomato gravy( saute 1 onion+4 tomatoes and 2 cloves garlic together- grind together. Heat for a minute with 1/2 tsp chillipowder and 1 tsp sugar)  Or use spicy tomato sauce. The sugar here adds a lot to the flavor.

4 tsp oil

Method:

Heat the oil and fry the onions for 1/2 minute.

Add the capsicum and tomotoes and fry again for 2 minu;tes.

Add the vegetables, chilli powder, garam masala, corander and salt and cook for a few minutes.

Spread the tomato gravy on top and sprinlkle a little grated paneer over it.

I like to spread a layer of bread crumbs on top of this and sprinkle a little more cheese/paneer over it.

Bake in a hot oven for  10 minutes.

Can be eaten with chapatis or garlic bread  just by itself .
