Tomato Thokku

Made ur thakali thoku today. Has come out wonderful:-) ‘

The message was on my cellphone when I switched off the alarm. And it woke me up beaming. If only I can work out a way for such wonderful wake-up calls everyday. So here is the recipe to share :

Simple Tomato Thokku

1/2 kg fully ripe tomatoes   

2 tsp chilli powder

1 tsp turmeric

1 tsp mustard

1/4 tsp fenugreek

a pinch of asafoetida

a small piece of jaggery

10-20 pods of garlic ( optional)

1/2 cup sesame  ( gingelly) oil



Wash tomatoes well and chop into small pieces.

Heat  spoon of sesame oil , add asafoetida and fenugreek seeds. Fry till golden brown(takes 1/2 minute) and then powder coarsely. Keep aside.

Heat the rest of the oil, add mustard and allow to crackle.

Add tomato pieces and and cook. Add garlic pods. Cook for a  few minutes. Add other ingredients and cook on slow fire till oil rises to the top. (about 20 minutes ) .

Add the powdered fenugreek and asfoetida.

Mix well ,cool and store in clean jar.

Note: Its the gingelly oil and fenugreek that gives the special flavor. Don’t  stint on the oil. Its a preservative too. And option is to grind the tomatoes before frying.
