Frittata

Frittatas are wonderful, one dish meals which taste good and are quick and  easy to make. And you feel good because you’ve got the protein from eggs and cheese and had your  veg quota and you haven’t had too much fat either.  So guilt free too.

My friend Maya describes it as a ‘ schwang schwang omlette’,  which it is. Frittata is an egg -based dish similar to an omlette or quiche, enriched with additional ingredients such as meats, cheeses, vegetables  or pasta says Wikipedia. Thought to have come from Italy or Spain. Iran has a similar dish called kookoo sabzi which sounds suspiciously Indian.

Ingredients :

Eggs – 4 to 6

Onion – 1

Cheese – 2 cubes at least- grated

vegetables- 2 cups of anything (I’ve tried zucchini, corn, broccoli and they were all great)

seasoning – pepper /oregano/basil/ chilli flakes/ …anything  goes actually except maybe garam masala

Method:

In a pan heat 1 tbsp of olive oil (or some cooking oil) .

Saute chopped onion and then add veg and cook for a few minutes till veg is tender.

Beat the eggs well, add salt ( a little less because of the cheese) and then the cooked vegg and most of grated cheese and seasoning. Mix it well.

Heat a non stick pan and pour in the mixture. Cook for a few minutes , shaking it around a bit occasionally,  till amost set. Watch to see it doesnt burn on the bottom. Sprinkle the rest of the cheese on top.

Either finish off by sticking it in an oven or broiler, or just turn it over for a few seconds.

Slice into wedges and serve hot.
